Refreshing Mellon SoupA perfect appetizer for Shabbat meal on a warm summer afternoon
Remove the seeds and rind from the melon, and pure in a food processor. Roll the mint leaves into ball and then slice them very thin in two directions and continue to dice until the mint is very finely chopped. Combine line juice and sugar. Mix all the ingredients together and let it cool in the fringe for a couple of hours or overnight. Add lime juice and sugar to taste. Garnish with a couple of blueberries in the center and a sprig of mint on the side.
- 3 ripe melons (honeydew or cantaloupe)
- 15-20 mint leaves
- 1 oz of lime Juice
- 1 tablespoon of sugar
Variations. One can add lime rind or Grand Marnier (available in the Schara Tzedeck wine store) for a zestier version of this refreshing appetizer
